First of all, Kuddos to you for the nice work.
UiPath already have the Output Datatable activity which converts the datatable to string. The only difference in your activity is the Custom column specifier property.
I would like to know more about the usability. Can you please provide me the use cases where exactly you think user gets benifited from your workflow.

Yes, you are right about the difference.
Use Case: Some time we need data to feedin to other systems with Specific Column saperator. I already encountered this situation for sending data a message to specified users. If I was using the default activity then data was not readable to users on the system so I had to create it.
